musi means, generally, fun or enjoyment, or anything that you use to generate fun. Music is musi (thatā€™s how I remember it), games (video or otherwise) are musi, that kind of thing. So musi Amanka is a type of musi (adjective comes after the noun).

Anything capitalized in toki pona is a proper adjective, meaning it describes something specific. So musi Amanka is some specific musi.

Proper adjectives in toki pona are often changed to fit the sound rules of the language. A-man-ka.
Well, ā€œkā€ in this context could be a transliteration of either an English k or g (or in some contexts, other sounds), so it could be A-man-gaā€¦
Final consonants are often dropped, because syllables in toki pona can only end in either vowels or specifically ā€œnā€ā€¦ could be something on the end there, maybe it was an Sā€¦ A-man-gasā€¦
