ye lobster is like super temperamental, its why you cook them almost alive (you kill it just before putting it in the pot)
So itās hard to transport, hard to store, and it wasnāt until they invented the ārefrigerated truckā and ārefrigerated trainsā that it was feasible to market it

ye lobsters are the rats of the sea; they are FULL of fucked up bacteria, so you have to kill them and immedietly toss them into SUPER HOT water to instantly kill all of the BS before it can start to multiply.
