induction stoves worked better for my family than gas stoves and are additionally cheaper to maintain other here, but that’s just because of how high the gas prices here are getting. some day I want to find out how they actually, uh, work.
in the US for a lot of people natural gas has a slight cost advantage on paper, but when you realize that gas has like a 35-40% efficiency and induction is like 90-95% efficiency suddenly the cost calculation often ends up in favor of induction again since you use less than half the energy
of course technically that waste heat can help heat your home so if it’s colder outside than inside it’s technically not truly lost BUT that is almost quite literally the most health-adverse conventional way possible to heat your home
especially since gas stoves release large amounts of air pollutants even when they’re not on
plus modern heaters often have efficiencies of over 100% anyways so it’s still inefficient comparatively lol

the literal only downsides to induction is it’s not compatible with certain (mostly older) pans, they’re more expensive, and you don’t have an open flame which has MARGINAL utility. only the first two really matter for the vast majority of people, and if they’re already included with the home, it’s only the first which again only affects certain pans. cast-iron, enameled cast-iron, and many kinds of stainless steel will work out of the box, and any pan manufactured to work with induction (very common) obviously also works. there are things you can buy that sit between the pan and the induction top that will heat up, and can be used to heat pans that are non-magnetic so it’s really all that bad to get non-magnetic pans to work in a pinch.
